Chia Pudding

Ingredients:

1 1/2 tbsp unsweetened cocoa powder, divided
1 tbsp maple syrup
1/2 tsp mint extract, divided
3/4 cups milk of choice
1/4 cup chia seeds
1/4 cup yogurt of choice
3 Fancypants Mint Chocolate Cookies, crumbled
Fresh Mint, for garnish (optional)

Instructions:

Add chia seeds, milk, 1 tbsp cacao powder, maple syrup, and 1/4 tsp mint extract to a small bowl and whisk to combine.

Cover and refrigerate overnight, or at least 3-5 hours, until a pudding consistency is formed.

When ready to eat, mix yogurt with cacao powder and 1/4 tsp mint extract and spread in a layer on top chia pudding.

Top with crumbled cookies and fresh mint for garnish, then enjoy! Keep any leftovers covered in the fridge for 4-5 days. Serve chilled with desired toppings, such as fruit, granola, or whipped cream.
